Big Green Egg Chicken Kabobs
Teriyaki Chicken Kabobs
2 pounds of boneless chicken breasts cut into 2 inch cubes.
Combine:
¼ cup of soy sauce
2 tbs. oil
1 tsp. fresh minced ginger root
1 tsp. sugar
2 cloves minced garlic
Pour marinade over chicken, cover with plastic wrap and refrigerate for at least 4 hours. The longer you marinate, the more intense the flavor.
Prepare coals on Green Egg (charcoal grill, or gas grill)
Put chicken cubes on skewers with an assortment of fresh vegetables. Vegetables that work good with this recipe are red onions, red and green peppers, zucchini, and mushrooms.
Grill at a temperature of 375 – 400 degrees for about 30 minutes until chicken is cooked through.
Note: If using wood skewers, soak in water to avoid skewers catching on fire.
