Big Green Egg – Awesome BBQ Chicken Pizza!!

As promised, it’s time for the BBQ Chicken Pizza recipe using The Big Green Egg, but first lets talk about making a really hot fire. Since there are a number of ways to start the coals, I will leave that to personal preference. Myself, I use the electric starter. I place it on top of whatever coals were left over from the prior time, and then add some on top of it. I let it run for about it 10 minutes then remove it. After removing, I shut the lid, but leave the top vent off, and open the bottom vent all the way. Within 15 minutes or so, you will have a roaring fire, and you can have the temp as high as you choose.
Now for actually making the pizza, which is well worth the effort.
1. Cover 3 small boneless chicken breasts with water, add 1 tsp. salt and 3 tbs. chili powder and bring to a boil. Cook about 30 minutes or until chicken is done. Allow to sit in pot of water to cool. Shred chicken when cool and stir in about ½ cup of BBQ sauce. A sweet sauce like “Sweet Baby Rays” is good.

2. Make the crust with “Martha White Pizza Crust Mix” according to package directions.

3. Lightly brush olive oil over the surface of a round cooking stone. Spread dough from center to outer edges of stone. Cover dough with about ¾ cup of the BBQ sauce.

4. Spread chicken over sauce. Add thinly sliced onions and chopped jalapeños according to your taste. Other topping can be added if desired.

5. Place stone on The Big Green Egg at about 450 degrees for about 10 minutes. After cooking for 10 minutes, sprinkle 3 ½ – 4 cups of shredded cheese. (The mixture of cheddar, mozzarella, and jack cheeses are good). Continue baking to another 10 minutes until cheese is melted and lightly brown. This pizza will have to cool for 5-10 minutes before cutting.

Wow! This was a fabulous pizza. I didn’t know that Martha White Pizza mix would make such a crisp crust. I think it would be good baked in the oven if you don’t have a green egg pit.

Great job on the pizza. I love my green egg. The best steaks in town because the mean green gets up to 650 degrees.
Even higher if you choose. But your right about the steaks.
